Ingredients:
4 nori sheets
1/4 medium head of cauliflower
1/4 cup cashews
1/2 avocado (or red capsicum)
1/2 cucumber
little bit of water
Instructions:
Process cauliflower in food processor. Pulverise cashews and mix together with cauliflower using a little bit of water. Cut capsicum and cucumber into strips. On nori sheet place cauliflower mixture, on top of it capsicum and cucumber. Roll together using bamboo mat. Cut into bite-size pieces using a sharp knife.
Blueberry-Fruit Pie
for 24 cm diameter cake
Ingredients:
450 g dried banana
450 g dates
2-3 bananas
200 g strawberries
400 g blueberries
Instructions:
Process dried bananas and 250 g dates in food processor until a crust is formed. Press it on the bottom of your cake pan. Cut 2-3 bananas into slices and strawberries in half and cover the bottom of the cake. In a blender mix 200 g of dates with 400 g blueberries. Pour over banana and strawberry slices. Put into the refrigerator for few hours. You can decorate with any fruit you desire!
Beet-Carrot Hamburger Bitesfor 2-4 persons
Ingredients
1 small beetroot
3 carrots
1 onion
1/2 avocado
4-6 cauliflower florets
basil
1 zucchini
2-3 mushrooms
10-15 cherry tomatoes
Instructions:
For hamburgers process beetroot, carrots and onion very fine in food processor. Make burgers and place in dehydrator. It should get little firm on the outside but remain soft from the inside. Then process together avocado, cauliflower and basil. Cut thick zucchini slices. On top of that put the hamburger, then avocado mixture, then slice of mushroom and on top half cherry tomatoe
Warm Vegetable Soup
for 2 persons
Ingredients.
1 zucchini
1/4 califlower
4 mushrooms
1 carrot
handful of sundried tomatoes
1 big tomato
warm water (not over 40 degrees)
dill
Instructions:
Spiralize zucchini and carrot. Add chopped dill, mushrooms and califlower florets. Process sundried tomatoes and tomato into paste and add to the soup. Pour over with warm water and let it set for 10-15 minutes.
Smashed Cauliflowerfor 1 person
Ingredients:
1/4 caluflower
1 avocado
Instructions:
Process cauliflower and avocado in foodprocessor.
Rice Salad With Mayo
for 1 person
Ingredients:
1/4 head of cauliflower
1 red capsicum
3 stalks of scallions
handful of sprouts
handful of dill
Dressing:
1/2 avocado
hanful of cashews
1/4 lemon
Instructions:
Blend cauliflower in food processor until rice-like consistency. Add chopped veggies. Make the dressing in food processor.
Zucchini Noodles With Ketšhup
1 big bowlIngredients:
1 large zucchini
handful of sundried tomatoes
2 ripe tomatoes
dill
Instructions:
Make zucchininoodles using spiralizer or use peeling knife to make your noodles. In food processor mix sundried tomatoes, tomatoes and dill. Pour over your noodles.

Cottage Cream Cake
10x10 cm cake
For bottom:
10 dates
1/2 cup dried banana
Cottage cream:
raw buckwheat (soaked for 2 hrs)
1/2 banana
handful of sour berries (red currants, red whortleberry...)
Garnish:
Sour berries
carob powder or cinnamon
Instructions
Blend dates and dried bananas in food processor. Cover baking mold bottom. Blend cottage cream ingredients and pour over bottom. Garnish with berries and carob powder. Refrigerate for few hours or put in freezer for half an hour.
Apple Pie In a Glass
for 1 personIngredients
1 apple
5 dates
2 frozen bananas
1 tbs cinnamon
Instructions
Peel and dice the apple. Dice dates and mix together with apple and cinnamon. Blend frozen bananas in food processor until creamy. Take a big glass and start layering - date and apple mix, banana cream...

8 cherry tomatoes
1/4 cup pine nuts
1/8 lemon
1/2 garlic glove
little bit of water
optional: red onion, dulse flakes, pine nuts to garnish
Instructions
Process pine nuts, lemon, garlic and water in food processor until creamy. Chop lettuce, tomatoes, onion and stir everything together. Garnish with Dulse flakes and pine nuts.
Banana Goes On a Date
Ingredients
about 3-4 frozen bananas6 dates
cinnamon
little bit of water (optional)
Instructions
Process bananas in food processor until creamy, set aside. Process dates with little bit of water until pasty. Serve together with cinnamon.
Basic Green Smoothie
for about 1 litre
Ingredients8 bananas
water
greens - kale, spinach etc.

Blend in a blender until everything is smooth,
Upside-Down Cake
Ingredients8 dates
1/2 cup shredded coconut
Fruit - bananas, kiwis, blueberries or any other fruit you desire.
Instructions
In a food processor mix dates and shredded coconut together until you get sticky pastry. Take a small bowl or plastic/glass container and lay down one layer of banana slices with covering the sides as well. Take about 2/3 of date-coconut mixture and press on top of that. Now start layering the fruit inside - blueberries, kiwis, bananas or any other fruit. Now cover all of it with remaining 1/3 of date-coconut mixture. Place in the fridge for few hours or overnight. When taking out of the container carefully loosen the edges with a knife and turn the cake upside down on the plate.

5 tbs berries
Instructions
Cut bananas into pieces, put into a container or plastic bag and freeze. When banana pieces are completely frozen, take 1/3 of it and put into food processor. Scoop into a serving bowl. Take another half of the bananas and process with berries. Scoop into the same serving ball. Take the last remaining banana pieces and process with carob powder. Scoop into a serving bowl. When serving, you can add some berries or cinnamon.
1 cake, 5x5 cm
Ingredients
5 dates
1/2 cup of shredded coconut
6 cherries
Instructions
Put dates and shredded coconut into food processor and process until you get very sticky and firm mixture. Take a cupcake mold or small plastic container (as I did) and press half of that mixture into the mold. Then add 4 cherries to the other part of the mixture and process. Cover the bottom of cake with this and set into the fridge for few hours. If you want to get the cake out of the cup, cut the cake sides with the knife so its will loosen up from the mold and then you can get it out by tuning it upside town to a plate. It can be a bit tricky, but I got mine out pretty easily :) Then serve it with two cherries on top!
Malibu CocktailIngredients:
1/2 pineapple
1/2-1 glass of coconut water
few tbs of shredded coconut
1 date
Instructions:
In a blender mix pineapple and coconut water together. Take a glass (or cocktail glass as I did) and with a sticky inside part of a date rub the edges of a glass and then sprinkle it with shredded coconut, so it will stick on to it. This is just for garnish. Pour in your cocktail mix and relax. :)
